The Byrdi bartender and owner with his take on the vodka caviar ritual.


This drink is an icebreaker, says Byrdi owner and bartender Luke Whearty.
“[It is] inspired by two of my favourite Martinis from a trip I had to London,” he says. “The first being the One Sip Martini from Tayer & Elementary and the second being the undiluted martini served from the freezer at Dukes Bar by Alessandro Palazzi.
“The idea was to have a fun ice breaker type serve to lighten the mood but also showcase some of the unique producers we are lucky to use at Byrdi.
“Basically a combination of the traditional vodka caviar ritual with a Martini using the flavour pairing of caviar, white chocolate and macadamia.”

Speed Bump
30ml Queensland Vanilla Bean Vodka
5ml White Choc Liqueur
2.5 ml Macadamia distillate
1 tsp of Yarra Valley Caviar
Serve chilled shot of batched Martini from freezer at -20 degrees Celscius.
Place valley caviar on back of guests hand and instruct to eat caviar first and then chase with Martini shot.
