It’s pouring now at JAM Record Bar, and is one of the best drinks of 2024.
The humble Fizz is popping up on more and more menus around Australia, but few bartenders put them together as deliciously as does James Irvine, the creative cocktail lead for Merivale, and the creator of the Matcha Fizz at JAM Record Bar in Sydney.

20ml Absolut Elyx
20ml Saint Felix Green Tea & Yuzu Spirit
20ml Massenez White Creme de Cacao
20ml fresh lemon juice
20ml egg white
StrangeLove Yuzu from Japan Soda
Shake all ingredients, except soda, and fine strain into a yuzu soda primed fizz glass over ice. Garnish with a dusting of matcha powder.
