Ellery Low’s Bourbon & Passionfruit cocktail is a drink we love
The former Maker bar manager has made one of the best drinks of 2024.

Ellery Low finished up a run of eight years at Brisbane cocktail bar, Maker, just a couple of months ago — and what a run that has been. The bar has become a byword for great cocktails in Brisbane, and it’s a favourite of just about every bartender who has sidled up to the small, flat top bar counter.
This drink — which spotlights bourbon and passionfruit, a combination you’re not going to see too often — is a drink we love.
“It’s a customer favourite and has converted a lot of non-bourbon drinkers,” says Ellery. “It’s silky and smooth, and was on the menu for more than a year, which is a big deal since we constantly changed the drinks at Maker.”

Bourbon & Passionfruit
1400ml Buffalo Trace
575ml De Kuyper Creme de Cacao
575ml Lemon Juice
360ml Passionfruit
500ml 2:1 Sugar Syrup
1L Full Cream Milk
Add all ingredients except milk together.
Add mixture to milk and let sit for 1 hour.
Strain through a paper filter and chinois.
After 15 minutes restrain the already strained liquid.
