Getting non-alcoholic cocktails right is a tricky business. The fundamental fact is that, without alcohol on the palate for weight, many of these takes don’t drink the same way a cocktail drinks.
Well, we think the talented bartender Tom Opie might have cracked the case. You’ll find his non-alc cocktail, Yuzu & Flowers,. On the menu at The Waratah in Darlinghurst, and it’s one worth ordering whether you’re on the booze or not. It drinks the same way a fine aperitif would drink, and that’s thanks to the extra texture and mouthfeel Tom gets using the spent lees from the winemaking process.
“It’s one of the few, brilliant non alcoholic drinks I’ve ever had,” says The Waratah owner and award-winning bartender Evan Stroeve. “Enough texture to make you think [there’s alcohol in it], chockablock with flavour.”
Someone get this into a bottle and onto retail shelves, pronto.
