Get Dale Schoon’s recipe for the Pornstar Spritz
When two drinks collide, Earl’s Juke Joint edition.
It’s a recurring theme in the drinks we find we love: they are often a result of two drinks coming together in one glass, taking a little bit of each and getting the best of both worlds.
That’s the idea with this drink form Dale School at Earl’s Juke Joint in Newtown.
“Honestly, the Pornstar Martini was having a moment and I thought it would be a fun take on it,” Dale says. “I wanted to make adult Pasito: fizzy passionfruit but less confectionary and a hint of interest from the myrtle.”
Pornstar Spritz
110ml Carbonated Batch*
10ml Passionfruit Syrup**
3 dashes of Saline Solution
Combine in chilled wine glass with ice, and garnish with fresh Lemon Myrtle Leaf
**For the Passionfruit Syrup:
Retain husks for infusion and strain pulp through chinois. Combine with an amount of sugar that is 80% of the weight of strained pulp.
For the Carbonated Batch per drink:
15ml Vodka
15ml Lillet Blanc
95ml Filtered Water
5ml Acidified Verjus
0.15ml Vanilla Extract
Sous vide batch at 60 degrees for 6 hours with: 3 passionfruit husks per litre of liquid, and 1% lemon Myrtle by weight. Chill, force carbonate and bottle in small crown cap bottles for service.
