The new Perth bar has squeezed in under the wire to land a drink on the Boothby Drink of the Year Top 50.

New Perth neighbourhood joint, Bar Love, has finally flung their doors open — and they’re bringing some damn good drinking to town.

“This drink is absolutely our Gateway Negroni,” says co-owner and bartender, Pippa Canavan. “Confession time: my husband and I both hate Negronis. We are about sweet, fruity bangers all the way home. So I wanted to create something approachable that would serve as a gentle introduction to those unfamiliar with the world of bitter flavours. This is all summer peaches and silky texture up front, but after you bite into the garnish, subtle bitter herbal characters come to the fore. Geddit!”

Peaches & Cream Negroni

Makes 65 Serves
850ml Gin
850ml Select Aperitivo
850ml Rosso Antico Sweet Vermouth
850ml Peach Syrup
975ml Buttermilk
500ml 5.5% Lactic Acid

Add the buttermilk to a large container and allow to come up to room temperature. Add remaining ingredients and stir very gently to combine. Store in the fridge overnight, then slowly strain through an oil filter. Store in the fridge until service.

To serve, pour 75ml into a rocks glass over a large, clear ice cube and store gently. Garnish with a frozen white chocolate disc dotted with peach puree.
