When you’re opening a new bar, there’s a lot of long days, early starts, and late finishes. And once that bar is open, well, your need for caffeine doesn’t end there.
“When we opened St Brigid’s during and after Covid,” explains the bartender behind the Long Mac Topped Up, Nick Francis, “we needed an Espresso Martini riff that was easy for staff to serve, so a pre-batched Milk Punch was the way to go.
“The name is a full blown pisstake on WA’s favourite coffee order, and from a guy that doesn’t drink coffee makes it even more of a pisstake.”
Long Mac Topped Up
210ml cold brew coffee
120ml Plantation Original Dark
120ml Mr Black coffee liqueur
120ml Brookies Mac
90ml tawny port
30ml lactic acid solution
400ml full cream milk
Combine all ingredients to make milk punch. This creates seven serves, garnish with biscotti (but Jess Arnott says pair it with a Guinness).
