An after dinner stunner from Edward Quatermass at Dr Gimlette.
Edward Quatermass knows how to put together a good drink. For much of the last decade he led the bar at Maker in Brisbane, and he’s know in charge of all things cocktail across the Cuatro Group, whose bars include Death & Taxes, Antico, and Dr Gimlette.
The inspiration for this cocktail? “[It is a] sweet and savoury post-dinner dessert, nightcap style drink.”
It’s one that works a treat, too.

40ml Roasted Wattleseed JD Bonded*
15ml Massenez Banane
10ml miso caramel**
Double Old Fashioned
Block Ice
Toasted Candy Banana Garnish
*20g Toasted Wattle Seed per 700ml JD, vac seal and leave room temp for 1 week.
**equal parts shiro & aka miso cooked down with caramelised sugar.
