The Toowoomba cocktail bar has been delighting drinks fans for years.

This cocktail from co-owner and bartender at Sante in Toowoomba, Loic Mouchelin, draws on a special ingredient from his French homeland.

“One of our proudest moments of 2024 at Sante is the release of our own calvados in collaboration with the distillery Christian Drouin in Normandy,” says Loic. “This special bottling is a 5 year old calvados made 100 percent from apple, aged 5 years; 4.5 years in ex-red wine casks from Bordeaux followed by a six month finish in a sauternes cask.

“We wanted to highlight all the flavours of our Calvados through a special drink. A drink where the apple is the star of the show while bringing some of these dessert wine and sherry notes from the barrels.”

Homegrown

40ml Sante Calvados
15ml Oloroso Sherry
5ml Pommeau Christian Drouin
15ml Sauternes & Cider Honey*

Add all the ingredients to a mixing glass, stir, and serve in a rocks glass with block ice.
Garnish with a thin slice of apple caramelised to order with raw sugar.

*For the Cider and Sauternes Honey:
In a Vac seal bag 100ml of Sauternes wine, 50ml of Brut Apple cider, 100g of Beechworth Grey Gum Honey, 2 cinnamon stick & 4g Ascorbic acid. Seal and cook sous vide at 65 degree for one hour. Let cool down overnight and filter through a fine sieve. Keep refrigerated.
