Lychee is having something of a comeback — on last year’s Drink of the Year Top 50, it was a trend we noted, and this year the trend continues thanks to drinks like Electric Blue from Elisa Rodrigues in Adelaide.
“I’ve long wanted to create a drink featuring lychee, and I also had a vision of crafting a vibrant blue cocktail on tap,” says the Maybe Mae bartender. “By combining these ideas, I brought Electric Blue to life—a fruity, refreshing, and perfectly balanced drink with a striking blue hue!”

25ml Never Never Triple Juniper Gin
5ml Heiwa Yuzushu
15ml Marionette Blue Curacao
2ml hickory smoked Lillet
25ml coconut water
25ml lychee concentrate
25ml verjuice
25ml chrysanthemum tea
3ml magic acid (citric, malic, tartaric)
Batch and carbonate and serve long.
