In the Melbourne suburb of Fitzroy, Par is taking a unique approach to their cocktails — they're mnaking them like wine.

Belle
Ingredients
- 10ml bourbon
- 15ml peach liqueur
- 1 dash Bittermen’s Xocolatl Mole bitters
- 20ml Allee Trop Loin Tropical Blanc wine
- 40ml soda
- 1g T2 Peach Tea
- 2.5g raw apple cider vinegar
- 0.05g inactive brewer’s yeast
Instructions
- Batch all together and cold infuse at one degree Celsius for 24 hours then fine strain.
- Let the strained batch rack for another 24 hours so the yeast will settle at the bottom.
- Then pour out the the clear batch. Carbonate at 50 psi and serve in a wine glass, no garnish.
