For this drink from the talented Andy Chu, he wanted to combine elements of two classic Melbourne dishes.
“[It is] something fun and savoury,” Andy says. “In Melbourne, you will definitely experience two popular dishes of XO pipis in Chinatown, or Anchovy Toast (at most fun wine bars).
“Why can’t we combine these two together and make it fun, and drinkable?”
Anchovy Toast
700ml XO Sauce Monkey Shoulder Blended Malt
100ml Mexican Chili Mezcal
50ml Sotol Spirit
50ml Honey Water
50ml Fino Sherry
25ml Lemon Juice
600ml Toasted Sourdough Milk
Curdle and strain
Stirred, Served rocks, Block ice.
Garnished with a house-made Anchovy mousse on toast.
